If it’s June, it must be time for me to make strawberry jam. 🙂  And it is!  But first, I had to get up at 6:30am and buy some strawberries.

Then I had to run 7 miles.

Then I spent the next two days making jam.  This is the first jar.

I wasn’t quite that happy by the end of the weekend. 😉  I did take the time to make some buttermilk biscuits Sunday morning to go with my delicious strawberry jam.

They were yummy…especially with my jam on them.   JJ was a great helper.

Meanwhile, while he was smashing berries, his brother was earning a rite of passage to manhood out in the yard.

Eventually, we finished with the jam.

*thud*  Holy cow, that’s a crap-load of jam! Even I couldn’t believe how many jars I ended up with.  One hundred eight, to be exact.  (Say wha…….????)  I was crazy exhausted by the time the weekend was done, but I was desperate to have a little reward for all my hard work (besides the wine shown above, lol).  So I whipped up a quick “light” short-cake using Heart Healthy Bisquick, fat-free Cool Whip, Breyer’s Sugar Free ice cream, and of course–strawberries!   I wasn’t all that sure I’d like it, since I’m usually a “rich dessert” kind of girl, and I usually prefer the “full-fat” version of desserts if I’m going to have dessert, but this one turned out to be a pleasant surprise!

Isn’t that pretty??  It was 10 points total (the shortcake was 7), but it was totally worth it–and totally filling!

When I went to bed last night, I set my alarm for 6am to get up and do…intervals.  Ugh.  I hate those.  They’re hard! (I know, I know, that’s the point…)  When the alarm went off at 6am, I was just not ready to get up yet.  I was tired, and my body was sore.  All that chopping and  lifting of jars took it toll.  🙁  I hit snooze a few times, then at 6:45, I actually reset the alarm for 7:45 (I work from home on Mondays, and while getting up at 7:45 is not ideal, I can make it work!).   But at that point…I was awake. :/  I still didn’t want to run, but I drug myself out of bed by convincing myself that I would just run 3 miles easy.  It wasn’t what I was “supposed” to do, but at least it was running, right?

Within 20 minutes, I was in the driveway, and somehow, my half-asleep brain decided that doing those 7×400 intervals was a good idea after all. 😛  And I did!

This was a slower overall pace than my 6×400 run, but I did have good interval runs–one was even a sub-8!  To be honest, I didn’t even care that I walked a good portion of my last three recovery breaks…I did intervals, even after my really exhausting weekend.  Go me! I call that a win. 😉

And after all that, I weighed myself…

Yes, that is a 2.4 pound loss from last week. 🙂  Granted, I felt like last week’s weight was absolutely not right (remember me calibrating my scale with weights, lol?), but at this point, I’ll take a loss!  I was worried about the effect of “strawberry weekend” on my weight loss regimen, since it’s tempting to just snack on strawberries all weekend long, but, despite the fact that there were 32 quarts of the little buggers in my possession, I actually didn’t eat that many strawberries.  Who would’ve guessed??

I know I still need to be vigilant about staying on track to lose the 8 pounds that are left, but I’m trying to remember that I tend to hang onto water during the summer and not be too discouraged.  I’ll be happy to get back under 120, though. And even lower if I can!

    Congrats Steph! That is an awesome amount of jam and it is just another reason why I hate that we are so far away… I would so be coming over beggin’ And hurrah for the weight drop, I am so proud of you for keeping at it. Take care, babe!

    Wow that is a crap ton of jam! Congrats on your intervals. You know you need to run especially when you don’t want to. It’s always rewarding when it’s over!

    So what do you do with ALL that jam? Boy, that has to be a lot of work!

    Big congrats on your loss this week. I know you’ve been frustrated. Try not to let that number on the scale be the thing you gauge your health and fitness level on. You are a rock star! No matter what the scale says!
