I didn’t like chili until I became a grown-up, married to a guy who can cook.  And then I would eat it, though it wasn’t my favorite.

But then…but then…I discovered this chili, and my world immediately become beautiful and perfect.

 

 

I found this chili last year (when I first joined Pinterest) on laaloosh.com, a great site that you very well may already be familiar with.  I don’t know what it is that I like about it so much.  Maybe the lime juice, because it gives it an awesome flavor that is lacking from other types of chili.  Or maybe it’s the fact that it’s full of garlic-y, cumin-y goodness with some chili peppers thrown in for fun. Or, maybe it’s because I just can’t seem to make the chili (which is very healthy and low in Weight Watchers points) without also making a loaf of homemade white bread to go with it (not so healthy and not at all low in Weight Watchers points).  The chili is divine, but when placed on top of a big, thick slab of homemade bread…oh, be still, my taste buds!

 

 

This is truly one of my favorite things to eat, and I’ve been waiting for cooler weather to come so that I could really enjoy it.  I finally put it in the menu rotation this past Sunday, and it was delightful.  Unfortunately, by the time we got to eat it, I had very little daylight so the shots of it are just so-so.

But who cares how it looks—it tastes awesome!!! 🙂 Hope you enjoy it as much as I do.

 


 
 

White Chicken Chili

10 oz cooked boneless skinless chicken breast(s)
4 oz canned green chili peppers
1 1/2 cup(s) uncooked onion(s)
1 small jalapeño pepper(s)
4 cube(s) chicken bouillon cube
4 clove(s) (medium) garlic clove(s)
1/4 cup(s) cilantro
1 1/2 tsp coriander seed(s)
1 tsp chili powder
1 tsp table salt
1/2 tsp black pepper
1/8 cup(s) fresh lime juice
1/2 Tbsp ground cumin
27 oz canned great northern beans
1/2 tsp canola oil

 

  1. In a large pot or Dutch oven, heat oil over medium-high heat.
  2. Add garlic and onion; cook, stirring occasionally, until softened, about 5 minutes.
  3. Stir in chili peppers, jalapeños, cumin, coriander, chili powder and salt & pepper. Cook, stirring occasionally, for 5 minutes.
  4. Add in beans and broth; bring to a simmer. Cook, stirring occasionally, for 20 minutes.
  5. Mix in chicken, lime juice and cilantro and cook for 5 minutes more.
  6. Dollop each serving with 1/2 tbsp sour cream.

    This sounds very similar to a chili recipe that Mary and I would make. Our is with ground turkey, I will have to try your version of it. Yummy!
